1 Package dried kidney, red or pinto beans
1 Package smoked sausage
1 Sliced onion
1 Can Diced tomatoes or Ro-Tel- optional
1 T minced garlic
1 t Salt
3 C Cooked rice- brown or white
Soak beans overnight and drain before cooking. Cook beans until soft. Brown sausage and onion together in a skillet. Add to sausage mixture to beans along with garlic and salt. Simmer together for 30 minutes or longer to allow the flavors to increase. This can be done in the crockpot, which is how I usually cook it. Serve over rice.
