2 C Cooked Pinto Beans with a small amount of cooking liquid
4 C Cooked Rice
¼ to ½ C Sliced green onions
1 Can Drained corn
1 Diced tomato or canned tomatoes
2 T Chili Powder
1 t Salt
1 t Garlic Powder
Small batch of prepared cornbread batter
Preheat oven to 350 degrees. Layer all ingredients into a 13X9 pan (except cornbread) or mix together and pour into pan. It works best if the ingredients are hot, it helps cook the bottom layer of the cornbread. Top with the cornbread. Bake for 25-35 minutes, or until cornbread is cooked through. Serve with cheese, sour cream, black olives, salsa, tomatoes, salsa, etc.
